Meatless Monday: Quick and Easy Roasted Vegetable Pasta Salad

I am always on the lookout for yummy, but quick and easy ways to create a meal that will also serve as leftovers. And boy, did I find a good one!

It’s tomato season. I love roasted vegetables. I miss pasta salad. My dietitian told me to get a variety of protein sources. These four factors combined to create a wonderful meal that nutritious in its own meatless way, or a great accompaniment to chicken, fish, or whatever floats your boat, especially if you’re trying to stretch it.

Ingredients

1 pint (or so) grape tomatoes, halved

2 bell peppers, cut into bit-sized pieces

1-2 cups small cauliflower florets

1 cup sugar snap peas

1 box organic green lentil penne (or regular penne. Or fusili. Or whatever you have)

Olive oil

Pinch of salt

Your fave salad dressing

Dash of Cajun spice or hot sauce

Note: this is very much a fly by the seat of your pants, eyeball, “what’s going limp in the fridge” kind of salad. The base is pasta and grape tomatoes, but play with ingredients and amounts based on your preferences and… well, what’s going limp in your fridge.

Directions:

Arrange halved grape tomatoes, bell peppers, and cauliflower on a baking sheet. Add some olive oil — I used a spray, because I’m not fond of oily food, but you can also add a glug or two. Then mix it all, making sure the vegetables are coated.

Place baking sheet in preheated 450°F oven and roast for 20 minutes, then check if the vegetables are done. This might need another 5-10 minutes, depending on your veggies and your preferred level of roast.

While the vegetables are roasting, boil the pasta. Use box directions or your own favourite method.

Then cut up the sugar snap peas or other raw vegetables you are adding to the salad.

When the pasta is done, drain and add to a bowl. Add roasted and raw vegetables, as well as salad dressing and a pinch of salt. Mix well. If you’d like a hit of heat, add a dash of Cajun spice or some hot sauce.

This tastes yummy warm, lukewarm, and cold.

    Past salad with roasted vegetables? I’ve never thought of this before but it sounds delicious! I love that the recipe is versatile and you can roast and add whatever you have on hand (perfect for those nights you need dinner fast and have no plan!)     This sounds super delish! I’m still learning the trick of, “what’s about to spoil and make something good out of it”. Hopefully, I can move forward and get a little better about not wasting food:) Also, sugar snap peas? I never thought to add those in!!

      I’m still building up my repertoire of dishes that can used the just about to go bad things. Soups and stews are always good unless you cooking it a lot anyway, so it doesn’t matter. Highly recommend watching food channels on YouTube. It’s taught me a lot. PS Sugar snap peas are good with anything! 🙂
